stuffed pizza

We all know good pizza, a food considered like the pasta to the love and devotion on the part of the Italians. However, if you want to "mess up" a bit 'in the kitchen, why not try to make pizza stuffed with spinach and mozzarella? It 'really good and it is suitable to be carried on a picnic!

Ingredients:

200 g of yeast
1 pinch of sugar
400 g of wheat flour
350 g spinach
200 g of mozzarella
1 egg yolk
Extra virgin olive oil

Preparation:

Put the yeast in a bowl and add a pinch of sugar and salt. Stir in the flour and pour in a glass of water, beginning and continue to knead until you get a soft and homogeneous. Cover and let rise overnight in the refrigerator after the time divide it in half and place one hand on a lightly oiled baking sheet, extending it over the entire surface.

Cook the spinach in a pot with a little lightly salted water for 10 minutes, drain, squeeze well, chop finely and put them over the disc of dough. Cut the mozzarella into cubes and put it over the spinach; tighten the pizza placing the dough over the filling remained.

Brush the surface of the pizza with a beaten egg yolk, pour a little olive oil and bake at 220 ° C for about 55 minutes, until they become puffed and golden brown. Sfornatela and serve warm.
