Recipe Pizza the standard

From the famous Sicilian recipe of pasta alla Norma, born of the same name pizza alla Norma, a delicious recipe that comes from the now proven combination of eggplant and ricotta salata fired, typical ingredients of Mediterranean cuisine, especially in southern Italy.

It is a very simple pizza and quick to prepare, perfect for any occasion and above all very welcome to lovers of salty.


Ingredients:

*500 g of sifted flour type 00;
*12 g of yeast; 

*250 ml of warm water;
*10 g of salt;
*25 g of extra virgin olive oil;
*250g ricotta salata fired;
*250g of chopped tomatoes;
*3 medium aubergines;
*extra virgin olive oil for frying q.b.
*pepper q.b.

Preparation:

Cut the eggplant into slices, wash and drain well, cut into cubes and fry in a pan with a little olive oil until browned optimal.

Roll out the dough for the pizza, sprinkle with tomato, add the mozzarella, a drizzle of olive oil, eggplant and a generous dose of grated ricotta in large flakes.

Add an extra layer of finely grated ricotta, a pinch of pepper and then bake in a preheated oven at 180 degrees for about 30-40 minutes.
